Ingredients

- ¾ cup P.A.N. Pre-cooked White Corn Meal

- ¾ cup rice flour

- 13 tablespoons cocoa powder

- 1 ¾ teaspoons baking soda

- ¾ cup unsalted butter, room temperature

- ¼ teaspoon salt

- 1 cup brown sugar

- 1 ¼ cups sugar

- 2 eggs

- 1 vanilla pod

- 1 ½ cups natural yogurt, sugar free 

Preparation

  1. Preheat the oven to 325 °F. Grease and flour a mold of 8 inches.
  2. Cream the butter with an electric mixer for 3 minutes on medium-high speed. Drizzle both types of sugar and blend for 3 minutes, until the mixture is pale and has doubled in volume. Lower the mixture from the edges of the bowl with a silicon spatula. Set aside.
  3. Mix the flours, cocoa powder and baking soda in a bowl.
  4. Beat the eggs one by one on medium-low speed and add the vanilla seeds from the pod with the electric mixer in a different bowl.
  5. Add the egg mixture to the butter and blend until you have a homogeneous mixture.
  6. Incorporate the flours and intercalate with the yogurt, starting and finishing with the dry ingredients, keep in mind to always lower the mix from the walls of the bowl so that everything blends well.
  7. Pour the batter in a previously greased mold, and bake for 30 minutes approximately.
  8. Remove from the oven and let it rest for 25 minutes before unmolding.
