Ingredients

-1 ½ cups P.A.N. Pre-cooked Yellow Corn Meal

-1,1 lb ground beef

-1 onion, cut in squares

-2 garlic cloves, cut in squares

-1 cup tomato sauce

-2 cups rice, cooked and warm

-1 cup parmesan cheese

-1 cup mozzarella cheese, cut in cubes

-1 egg slighty whisked + 3 eggs slighty whisked for breading

-2 tablespoons olive oil

-Oil for frying

-Salt and pepper

Preparation

  1. Heat olive oil and sauté the onion and garlic carefully so it does not burn. Add ground beef and cook over medium heat for 5 minutes. Add tomato sauce and cook for 4 minutes. Season with salt and pepper to taste. Set aside.
  2. Combine rice, parmesan cheese and the whisked egg in a mixing bowl. Knead until the mixture is compact. Divide the dough into 6-8 equal portions, form balls the size of a tennis balls and make a hole in the center with your fingers. Add a tablespoon of ground beef, mozzarella cheese and close the ball with the same rice. Make sure the filling stays inside.
  3. Pass the balls through the whisked egg, bread with P.A.N. Pre-cooked Yellow Corn Meal and set aside.
  4. Heat abundant oil in a pot so it covers the balls completely while frying.
  5. Just before start frying, bread the arancinis one more time passing them again through P.A.N. Pre-cooked Yellow Corn Meal. Deep-fry until golden brown.
